Last year I installed a 50ah LifePo4 battery on my Pro Angler, along with a Minn Kota 30 lb trolling motor running through a wireless PWM.
Running at full speed, I'd guess the setup will run for over an hour, maybe two at perhaps 3.6-4.0 mph on a flat lake. I've never run it from a full charge to empty, so I'm not exactly sure how long it will last under real conditions.
However, there's a much more efficient "cruising speed" which gets me to 3.4-3.6 mph, which only requires about 75% power. Under moderate use, that easily propels my Pro Angler for many, many hours. I can easily drive and fish all day just by dialing it back by 25%, and rarely touch the pedals.
With all that said, the motor and battery adds an extra degree of complexity that I often don't want to deal with. In fact, I haven't used the motor at all this year, but it's a nice option when you really want it.
Edit: I installed my motor on a custom transom built on the back of the kayak so that I can use the Mirage Drive. Using the trolling motor + Mirage Drive easily gets me over 4 mph without breaking a sweat, but I'm usually reluctant to pedal since the yak is moving fast enough to damage the Mirage Drive if I hit anything submerged.
