        Is that the Masgouf style? Or is that your invention. It looks so good. It looks like the skin side of the fish is actually on the burning wood. Is it? Good job!

                      I cooked it over an hour and ended up over cooking it but it was still good, the edge a little crispy.

                      I recommend getting some tamarine puree from oriental store for the sauce. I made my sauce with tamarine, maple syrup, salt, pepper, hot sauce.

                              Yeah you want to put the skin side (with scales still on) directly on the coals to finish it off (also the perfect time to put a sauce). The scales protect it from burning.
