Caught a bunch of big croaker and want to do something different. Thinking fish tacos. My question for those that do it what's the best breading, pamko, flour, etc? Normally I fry the whole fish southern style in cornmeal. So unsure on the taco front

I use Panko mixed with seasoning of garlic, chili and onion powders, salt, pepper, cumin, paprika and a little dried parsley. I increase the seasoning depending on the fish. I cut into strips about 1/2" to 3/4" in thickness and 4-5" long. Then accompany with guac, cabbage slaw, salted tomatoes, pickled red onions and sour cream drizzle. Dimo, that sounds awesome. I have no other point to suggest unless you want to pan sear them instead of frying. if so keep all the great spices Dimo stated and add whole butter to the pan. after adding spices to the fish pieces, dust the fish in corn starch. it will add a bit of a texture to the fish you will like when pan frying.Rich

Ok ask and you shall recieve....... success I say... success
Ok croaker so take chunks of fileted croaker and dredge in milk/egg wash. Then throw in bag with seasoned panko. I seasoned with chef paul seafood magic. Let dry for a few minute then throw in frying pan with a little hot oil.
Homemade slaw, consists of shredded cabbage (I sweat the cabbage with a little salt to get the moisture out), diced red onion, shredded carrots, cilantro and lime juice and honey to taste.
Made a sauce with thousand island and siracha sauce.
All in all I'm in love. Thanks guys
