My wife breaded and fried the oysters you gave me Saturday, Rick. It was tricky trying to shuck them with a screwdriver. Anyway, delicious!

Steve, moc raves about your fried blue crab recipe. You're going to have to tell me how to make them. I think you take off the shell and fry the legs/body when coated with egg, flour, and ginger, right?

Don't forget to make a nice lump backfin crabcake to put in the middle of the crab before you deep fry it. Much better that way. I usually just open the shell of a steamed crab clean it and load in a nice size backfin crab cake in the "cavity", dip in beer batter and corn meal mix and stick it in the deepfryer till golden brown, (about 5 min or so). Open another can of beer and use it too wash down the (Hardfried) as they're called in the restaurants.
Let us know how it turns out. You have me wanting one so badly that I may have to go to Arundel Seafood on Mountain Rd in Pasadena for one tomorrow. Oh yeah, and some raw oysters too.

Rick, Any chance you may be there the week of June 16th threw the 23rd? I'll be in OC and am planning a day to Kipto but a two day trip would be better! LOL. Its a vacation week and I'd have to convince the wifey to let me go for an overnight without her while I'm there. The other option is to bring her. Is there anywhere she can go and shop or anything like that while we're out fishing. Either way I'm going its just would it be a one day or two day junket...
          Thanks,
          Tom

lol.....you got hungry just describing it to me.

            1 Steam/cook crab
2 Remove back shell from cooked crab
3 Clean and then stuff the body cavity with backfin crab cake
4 Coat stuffed body (with legs attached) in beer and corn meal batter
5 Deep fry until golden brown

            Right?

In another option, I think the batter suppose to have lots of ginger. Not sure if that's what moc told me.

I can vouch for the oysters . The were great roasted. Thanks again Rick. If you make a run for Oysters, then I will take a bushel. That is my order in advance when we have enough interested parties. If he needs an order of 10 bushels, just between me and Steve we got 3.

I've never used Ginger to spice it up but you can never go wrong with Ginger as a seafood spice. I'm gonna pay my $6.50 for mine and its allready done and hot. No Mess or work on my end...Good Luck adn by the way theyre called Hard Fried or Fried hard crabs and are on most seafood rest menu's in Anne Arundel Co. Not sure but i think thats where it all started was in AACO

That is the recipe that I used from down south. Another one that I use does not involve any batter.

Remove the back from the raw crab and clean the inside....remove gills, guts, etc. Break the body in have to you have two halfs with 5 intack legs each.

                  Rinse crab in white vinegar.

Sprinkle "alot" of garlic powder, lots of fresh grated ginger, adobo, sprinkle some salt, black pepper, paprika. MOre is better.

Then lightly dust the seasoned crab parts with corne starch.

Throw them into hot oil at 375 degrees and deep fry until golden brown. The crabs will also float to the top when just about done. This only takes a few minutes. Do not overfry or the meat will stick to the shell real bad.

                  YUM.

You can chew on the crispy legs too and suck the flavor out.

I've made fish tacos a lot with perch and trout and they are very good!

Tog tacos sounds awesome. When I make fish tacos, I like the fish fried with tempura batter and top them with Baja fish taco sauce. shredded cabbage is also very good on fish tacos for an extra crunch.

                      Dec M&G at Kipto

Almost forgot. Here's a pic of CBkayak, Memorymaker and Shadyfisher at the camp site. It was late afternoon Saturday just before Memory took us on a Cape Charles tour. Memory's trailer is on the left. Shady's black SUV on the right. CB is going to have a shrimp salad sandwich.

Oh, thanks Moc and Medicyaker. My wife made me a variation of your blue crab recipes. Hmmmm.....good.
