    With the upcoming meet and greet and massive amount of perch that we are about to catch does anyone care to share how they make their perch?

    Fried, broiled, poached, pan seared or otherwise.....all fair game.

    Fried always works. I use Louisiana brand fish fry breading. I lightly season the fish prior to coating though...even though the breading is seasoned.

    I've also backed the fish as well. After seasoning the fish...dip in egg wash, then coat in a mixture of panko breadcrumbs and parmesean cheese. Pretty good.

      1. Coat in flour seasoned with old bay
      2. Coat in egg
      3. Coat in Panko bread crumbs
      4. Drop in hot canola oil
      5. Enjoy!

      For the females with roe I either coat the egg sac in seasoned flour and fry in butter or pan fry with a little caribbean jerk seasoning, break up the egg sacs, and add scrambled egg mixture after the roe has turned white. Yellow perch roe can be a bit strong tasting, but still pretty good. I prefer white perch roe.

        Everyone says how good the roe tastes...especially with eggs. I might have to buck up and try it some day...

            I was hesitant to try it, but I had plenty last year and loved it. I also ate it with eggs, or to accompany the perch. I don't like to break it up though. I wonder if you can eat it raw, sushi style.

              All yellow perch needs is some butter in the pan and a couple mins. Treat them like rainbow trout.

                I would only eat them if they're clear and yellow, which are good. I tried some when they were still a little green, and they were kind of nasty.

                      Southern Fried Fish recipe- Clean fish, cut into filets- rinse throughly and pat dry with paper towels- dust filets liberally with Cajun seasoning (You can make your own- I do), roll filets in white corn meal and drop in 350 degree deep fryer- when ends of filets roll up dip filets out and allow to drain on paper towels- serve hot with cole slaw and hush puppies-

                      Cajun seasoning-
                      4 parts of table salt to one part of:
                      (I usually use two heaping tablespoons of each)
                      Paprika
                      garlic powder
                      cayenne pepper (you can use more but...)
                      onion powder

                      Hush puppies-
                      Martha White self-rising corn meal-
                      follow recipe for making corn bread but add a cup of finely chopped green onions and stir in until mixed completely-
                      Take large spoonful of cornbread batter- drop batter into deep fryer you cook fish in- when hush puppy floats and is golden brown remove from oil and drain on paper towel

                        I always eat YP with the bones in.. Something about that bone meat being sweet...

                        My personal favorate is to head/gut/skin then take out the big cast iron get a little peanut oil make an egg and flover dredge with some old bay and pan fry them at 350...

                        The roe is best fried and served with sausage and eggs for breakfast. No breadingneeded for the roe as the flavor is great.

                          I like them Blackened too. I just use blackened redfish seasoning:

                          Coat both sides of filet with seasoning. Melt some butter in a frying pan and get it really hot until it just starts to smoke. Cook filets for about 2 minutes per side or until slightly charred. Serve on top of white bread and pour the drippings from the frying pan over the fish.

                            -1 circle hook.
                            -1 nose piercing.
                            -Lower your drag to a simmer.
                            -Soak near structure until frisky.
                            -Wait for the reel to steam then count to 6.
                            -Add a few pounds of drag.
                            Set Hook and reel.

                              Pinch- For some reason live bait fishing with white perch doesn't get very many hits for me in the Bay- small croaker and spot is deadly, killifish is deadly, live peanut bunker is deadly (so are eels, when legal) but unless you are fishing perch cut bait it doesn't account for many fish- big Blue cats will eat them- but they eat everthing
