I caught some croaker with Metroman and Foursteps24 on the charter trip we took and had one blackened with redfish magic seasoning for lunch the next day. I thought it was ok, but I prefer most other fish that I've caught over croaker. I've also had it fried.

How do you all cook croaker?
    in paella is my fav.

Nice report on your blog Sun. Sorry you couldn't make it Saturday, but I see you did very well Friday night.

I also pan fry so it's crispy on both sides. I just seasoned it with salt and pepper.
