Right on the edge of getting really good oysters, it all depends on water temp. Once the water gets over 20 degrees celsius they stop producing meat and start producing sexual gonads. This usaully corresponds to the months of May, June, July and August. Hence the old saying dont eat oysters in a month without an R in the name. From here on out id say EAT EM UP!!! should be good down there by Cherrystone with that high salinity this year. I work at one of the largest Oyster hatcheries on the East Coast and although I dont enjoy them raw, it is about to be prime oyster shucking time!!-Wilderness Systems Tarpon 160
