With a little motivation from a Striper dip recipe posted on the pierandsurf forum, I decided to make my own Striper dip.
What you will need:
2 cups cooked and flaked Striped Bass
8 oz tub of whipped cream cheese
1/4 cup of mayonnaise
3/4 cup of shredded cheddar cheese
1 tsp lemon juice
1-2 tsp old bay (depending on your taste for old bay)
1 tsp. celery seed
10-15 drops of hot sauce
Town House buttery crackers
What to do:
Drizzle a glass baking dish with olive oil.
Sprinkle a little old bay on top of your Striper filets and bake uncovered in the glass dish at 350 for 20 minutes.
When the filets are done baking, flake them apart into backfin crabmeat sized chunks.
Mix the cream cheese and mayo until smooth.
Stir in lemon juice, old bay, 6-10 drops of hot sauce, 1/2 cup cheddar cheese and celery seed.
Gently stir in fish chunks and transfer mixture to a 1.5 qt baking dish.
Sprinkle the rest of the cheddar cheese, a few additional drops of hot sauce, and 4-6 crumbled crackers on top.
Bake at 350 for 25 minutes.
Enjoy with crackers!
