    Man, I am stuffed! Sitting here in my big easy chair with a big smile on my face with a full belly- nothing like a big meal of fresh speckled trout...flaky, translucent white fish that is absolutely delicious- yummmm- I cleaned the two I caught yesterday morning when I got home from work and pulled the fresh fish out of the fridge I caught Thursday afternoon for a big mess of speckled trout under the broiler- real simple recipe- butter, salt, pepper and lemon juice- lightly browned under a hot broiler...served with rice pilaf and steamed broccoli

              Sounds good. I do a similar recipe but add white wine and use old bay or season all instead of salt/pepper. I cover it to keep the sauce from evaporating, then pour it over the fish and rice.
