    My first attempt at making ceviche from the sea bass caught on the deep drop trip.

      This was my first attempt at making ceviche. I took about 4 fillets of sea bass and cut them up into cubes between 1/4 and 1/2 inch. Place the cut fish into a GLASS bowl and cover with fresh squeezed lime juice. Make sure all the fish is covered in the juice. Two lbs. of lime should do the trick. I put this in the fridge overnight stirring occasionally. I then diced up 1 red onion, 1 sweet pepper and 1 serrano pepper and added it to the mix along with some salt (about a teaspoon or two) and let sit for another hour or so. I served mine over seaweed salad and it was delicious. I may try it with tomato and avocado tomorrow. Its really easy to make. You can google recipes for additional ideas.

        PS - If you elect to use the serrano pepper be sure to wash your hand thoroughly BEFORE going to the bathroom. Learned that one the hard way

          Thanks so much for the recipe. Can't wait to catch a fish to make this, so I'll have to go back to Whole foods where they had some really nice looking Rockfish for sale.
          As far as the serrano pepper - found out the hard way when I rubbed my eyes. ohhh the pain

            Almost forgot, recipe calls for a bunch of cilantro also.

              Looks tasty. Ceviche is served best outside on the back deck on a summer afternoon with some cold beers!
