I saw this recipe and thought of Mustafa and his unique way of cooking fish. Different cultures, but similar way in cooking the fish....

That looks delicious. It does look very similar to the way Mustafa does it.

Yeah a buddy of mine from Guatemala told me that they do it very similar in Central America. Interestingly enough I've come across a lot of cultures who cut and clean the fish the same way as for Masgouf (like in those videos you sent). Also the second video you posted is a carp, which is what proper Masgouf is made out of believe it or not. Not sure why we don't eat carp here, maybe its our water or something... But in Iraq, different parts of Asia, Central and South America, and Africa Carp is a staple.

The fish in those videos are mouth watering, especially that last one, I could smell it through my screen! LOL!!

Using the basket is the next best thing though for anyone who doesn't have the setup. I use one and put it on the grill when I'm lazy or ran out of wood. The fish in this post (http://www.snaggedline.com/showthrea...8707#post68707) weren't off of an open fire. One fish was cooked on the grill with a basket and the other was broiled in the oven. I ran out of wood that day and didn't want to run out for it...
