I'm looking for some ideas for cooking the snakehead that I'm going to pull out of Mattawoman tomorrow morning. Fried, Thai, broiled, whatever you favor, I will try them all. Thanks!!!

Blackened - yep Cajun style is a great way to prepare many fish species and snakehead is NO exception. Dip filets (or pieces) in melted butter, season to taste (I like it heavy) and I put a cast iron skillet in my gas grill on high heat to cook the fish in - keeps the smoke out of the kitchen.HOBIE: 2012 PA-14 (Dune) & 2013 PA-14 (Yellow)

Don't go frying those fish before they're in the boat. Actually before they are dead and in your boat...
My favorite recipe learned from a good friend.
-gut fish
-keep whole (don't filet-don't scale)
-coat slimy skin with a thick coating of salt and old bay
- put on grill (I think it was about 40 min. -maybe longer)
When done, fish is very easy to seperate from skin and bones and it strongly resembles crab!

Last year recipes:
1. Scale, fillet, cut into small strips, bread it with mix bread crumb, fried it up. I love this the most.
2. Caramelized SH in clay pot. Don't ask me how, my mom cooked it. It tasted good, typical Vietnamese dish.
3. Sweat & sour soup with SH. Similar to above, it tasted good but don't ask me to cook it lol
4. Fish tacos: I used fish from #1
Recipes I want to try this year:
1. Chinese steam fish: you can easily find recipe on Youtube
2. Masgouf: I hope I don't chop my hand of doing this. I don't have recipe for this but you can find it with a simple search.

The next time I catch one I'll either smoke the filets lightly and make a creamy smokey stew with heavy cream, fish stock, bay leaves, cayenne, marjoram, garlic, potatoes, peas, corn, and chives.
OR
Cut it in chunks sear it hot and fast with thai chilies, coriander, cumin, ginger, garam masala, onions, garlic, and then simmer in coconut milk, fish sauce, lime juice, and honey for a spicy but pleasant curry.www.anglerswithoutborders.com

Remove head & gut snakehead...no need to remove scales.
Place in aluminum foil-lined glass casserole dish
Squirt on organic lemon juice
Surround with organic peas, corn, green beans, spinach,squash,onions(any combination)
Douse w/organic olive oil
Sprinkle with Frontier's Veggie Pepper & Old Bay
Cover w/foil and make several piercings
Bake @400 degrees for 20-30 mins, depending upon size of fish...
Longer if 2 or more fish are being cooked at once.
Enjoy your meal w/a beverage of your choice!

Scale and gut (I also cut out the gills),
completely coat in kosher salt, stuff with favorite herbs, etc.
This one I stuffed with Lemon grass and Jalapenos.
Grill for 10-15 mins on each side.
Serve family style and let your guests eat the eyeballs.
