I killed two deer last year, but both were for friends- shot both with a crossbow- they come in my yard and eat my flower bushes and get in my garden- we have way too many deer in Charles County- but I have gotten so I don't like the taste any more- I used to love deer meat but not any more, so I don't hunt for them unless someone asks me for some deer meat- Don't believe in killing anything you don't plan on eating unless it is vermin-
In my fridge right now, is some buffalo summer sausage that I really like and in my freezer, some elk roasts that are something special! I have friends out west that keep me stocked with bear stick treats, smoked salmon, smoked chukker and ringneck pheasant- got to beg to get the elk roasts, though- that is my all time favorite wild game- elk is delicious. I usually make four or five trips per year to Oregon and Washington State- while I am there on business, every once in a while, my friends who hunt sometimes take me on quick trips fishing or bird hunting. Got a really nice King salmon earlier this year in Oregon on the Columbia River. We ended up with almost 20 pounds of smoked filets off my fish. My buddy has a big professional type smoker with electric heating elements where you put the apple wood pellets and has a brown sugar/brine solution you marinate the fish overnight before smoking- takes about twelve hours of smoking to preserve the fish. Yumm!
