I have heard nothing but bad experiences eating cow-nose rays. The meat is as dark as beef. Skates on the other hand are very good.
On the topic of rays i was fishing last Friday night at PLO and caught a baby northern string ray. I have never seen them this far up the bay before. Might be more bull sharks around this year.
