I Decided to take a trip on the 12th to my favorite spot on eastern shore Hoopers Island despite the weather. I reached my destination around 3PM & unloaded the yak on a beach. I could see the other side of Chesapeake Bay thunderstorms while fishing. Had great time for 8 hours, caught my first specks on cut up spots. I did lose a big speck at my yak as I tried to net it, had me thinking rest of my trip home it was way bigger than my 20" speck I caught. Also Caught One hugeeeeeeeeee ray, had to cut line as close as possible as I was not in mood to throw that carpet on my yak. Also fished in middle of a school of bluefish, lost plenty of them as they jumped out the water like a tarpon. The bluefish cutting my lines & skates hooking up was a little aggravating. I caught two 14.5" Croakers, including plenty others above 12". I made me some fried Speckled Trout Roe for first time, anybody know any other recipes to cook the Roe? The trip was well worth the 2 1/2 hour trip from WV. I plan on hitting the bay on my next set of days off, primary target will be Specks. Now I can mark off Speckled Trout on my target catch list for this year.

Nice job, you have a lot of future dinners from that outing! I had a similar experience last week, several of the specks I took home were full of roe. I like to eat fish, but I plan to catch and release for a while to give them a chance to spawn.

Nice catches! I need to get back out that way soon, maybe next weekend...
My favorite way to prepare roe from any fish is as follows:
Coat a frying pan with a little bit of olive oil.
Heat frying pan over medium/high heat
Add roe to heated pan and break apart the sacs to an even consistency.
Add some bits of the fish that the roe came from
Add some Old Bay or Carribbean Jerk seasoning.
Cook until the roe turns white.
Add 3-4 beaten eggs.
Cook until eggs are done.
Top off with a little hot sauce or salsa and shedded cheese.
