Video #1 I have done for bullhead but I think either method in video #2 would take forever.... To much messing around. On my last charter trip, the mate did a whole bunch of croaker like that. It was really efficient for him being handy with the knife. I did the same on some WP shortly thereafter. It worked great. I just gotta catch fish big enough to make it worth while!

That way is much tougher than the video portrays.....and it leaves the bones in. So you would have to bake the meat so it would fall off the bones easier or pick around the bones. Does not produce those nice filets in the other video.....learned this on sunday during the superbowl. (Which answers the question of I would rather fish than watch football.)
I do the same thing chimo posted. On bigger fish like crappie there can be meat under the ribs so I do a sharp angle under the ribs and scrape up and out if that makes sense.
Never learned how to butterfly a trout though and that's normally what I fish for this time of year in sw Va.
