    I'm not to big on rubs unless I smoke them.. and that's on the skin... but what ever is you favorite go with it...
    I cook a lot of fish like this... this one is stuffed with apples and garlic... you will want to use a thermometer
    to make sure the inside are cooked... fresh sage from the garden layers the fish with oranges to keep it moist..
    high heat on both sides to give it a smoke at first and then turn it down to bake.. on the grill.
