I have been toying with adding some 12 volt marine LEDs to illuminate the cockpit at night for night fishing.

Lumitec makes some nice LED lights. I have been toying with the idea of a few under the mounting boards, for night fishing. I am also thinking of using red to keep from reducing night vision. There is also one version from Lumitec, which is switchless, with a built in dimmer. It also comes in a red and white light version, in the same light.
I have become fond of my trolling motor. When trolling for 8 hours, it is nice. Besides, trolling in the shallows produces alot of fish.
Nice rig Rick.

This was what the waterfowl site turned up quickly on a search. I canvouch for any of the switches, but guys where recommending these switches.
Waterproof switches
These are awesome multiple switches but very pricey.
