          Keeping the head on keeps the fish intact and stops it from falling apart. You basically use the fish's bone structure to support itself while it's hanging and roasting.

          Plus like Khanh said the cheek meat is the best and when most people cut the heads off they loose a lot of good meat around the top and bottom of the head. You basically pick around the skull and throw the bones away.

                Thanks, Mustafa! I can't wait to try your technique. I might get out tonight where Frogsauce goes out in Chesapeake/Norht beach are. If I get a fish I will do it Masgouf style
