Croaker Sammich..add your catch on the table

    Scale and filet. Leave skin on. Soak over night in milk, butter milk prefered but whole will do. Place skin side down on a baking sheet that was prepared with a ltitle olIive oil. Sprinkle with salt, pepper and a little old bay. Broil on the oven for 15 min or until flaky.

    In the mean time prepare your favorite mashed potatoes. I spice mine up a little with smoked paprika for a hint of smoke.

    Take fish out of oven and flake apart. Mix in with potatoes. On a floured cutting board patty up your cakes. Then throw them in a frying pan with a little olive oil and fry until golden brown.

    Asparagus can be sautéed in a pan with minced garlic and butter until tender or bake in oven at 350 with olive oil until tender.

    Enjoy the meal. Makes any bluefish wonderful. Some people remove the blood line, I only do so on the big choppers.

            Yes...I always filet croaker. Small filets but so tasty........I think croaker is my favorite eating fish in the bay (though i also like fresh speck). A little harder to take care of, but worth it

              I'll have to try it. I've always scaled, gut, and remove heads then bread in cornmeal and pan fry in a cast iron pan per my great grandmother's recipe

                I also enjoy the croaker sandwich lunch the day after the trip! I fillet them, remove the skin and pan fry in breading. Place on a toasted sourdough bread with miracle whip, pickles, crispy lettuce and some lemon juice.

                  bump...

                  Freshly grilled sheepshead with some lightly sauteed veggies.




                  I made some soup out of the rack and head, but ate it up before I thought to take a picture of it.

                            I have no photo to show -- but my taste buds are still saying thank you. I caught a large snakehead on Fri evening. I cleaned it Sat morning and marinated it in a mix of Italian salad dressing and Old Bay. On Sat evening I broiled some of the fillets. They were tasty, but not as good as tonight's preparation. I left the remaining fillets in the marinade until dinner time, then pan fried them in olive oil after sprinkling with some Panko bread crumbs. My wife bought some Eastern shore corn, and tomatoes and cucumber from a local farm stand to round out our locally produced meal.
