Scale and filet. Leave skin on. Soak over night in milk, butter milk prefered but whole will do. Place skin side down on a baking sheet that was prepared with a ltitle olIive oil. Sprinkle with salt, pepper and a little old bay. Broil on the oven for 15 min or until flaky.
In the mean time prepare your favorite mashed potatoes. I spice mine up a little with smoked paprika for a hint of smoke.
Take fish out of oven and flake apart. Mix in with potatoes. On a floured cutting board patty up your cakes. Then throw them in a frying pan with a little olive oil and fry until golden brown.
Asparagus can be sautéed in a pan with minced garlic and butter until tender or bake in oven at 350 with olive oil until tender.
Enjoy the meal. Makes any bluefish wonderful. Some people remove the blood line, I only do so on the big choppers.
