  • Last night's dinner....

    My kipto flounder. I finally cooked it last night.

    The fish was so good last night. Thank goodness for vacuum sealers :-) I brushed both sides with olive oil, and seasoned it with Zatarans creole seasoning and cayenne pepper. Broiled it to perfection!

            yummy. I have not put a keeper flounder in my fridge going on 3 years.

            And

            I just cooked up my last batch of rockfish from last year yesterday. I'm fishless and hungry now.

                Time to go fishing! That was my first time catching a flounder. So delicious. The meat tastes so ....pure, if that's a proper description

                    At the risk of hijacking the thread (but staying on the seafood theme), I had an awesome seafood dinner tonight in the south Houston area. I am staying at a hotel in Clear Lake, TX, right across from the Johnson Space flight center of NASA. We asked the desk clerk for a seafood recommendation that was not a chain restaurant. The woman said she had been to a local oyster bar with her husband and really enjoyed it.

                    Three of us drove there expecting a beer joint that sold oysters. It turned out to be a nice restaurant with an oyster theme for happy hour. We shared three dozen cooked oysters (a) broiled with excellent seasoning, b) Rockefeller, and c) oyster/crawfish enchilada style served on the half shell) plus two orders of spicy jalapeno poppers. After three cold beers to wash that down I had a happy belly.

                    Tomorrow evening I will stay in Galveston and sample the local delicacies there, then on Sat I will ride the ferry across to the Bolivar peninsula to spend two half days speck fishing. Life has been pretty good this week, including wearing short sleeve shirts again for a few days in the mild weather.

                      John- I will join you on the Gulf Coast Sunday- the best oysters ever is at Drago's in New Orleans- charbroiled, butter and lemon juice drenched- fly home Thursday- plan to fish for Specks and reds in lake Pontchatrain at night after working during the day- I used to do this when I worked there from 1999- 2002. Go to City Park where the canal empties into the lake with medium spinning tackle, throw cocahoe minnow lures under the lights and then hang on for dear life- reds up to 12 pounds, specks around five pounds and white trout hammer that soft lure-

                          Metro--I know what you mean by "pure" tasting. I was never into flounder, but my mom loved it. I was out on a research cruise offshore of Ocean City, and we caught a couple enormous flounder in the trawl. One of the guys was studying their diet, age, and growth rates, so we worked them up, and iced them down right away. The captain cooked it up for us between stations (in a microwave, of all things). It had been dead and on ice for less than 4 hours, and it was the best piece of flounder I've ever eaten. It wasn't bland or mushy like what you often get at restaurants. Instead, it was sweet and clean tasting. Because of that one experience, I'll never be satisfied with restaurant flounder again. I cooked a flounder for my mom a day or two after I caught it at St. Jerome's and ruined her for store-bought flounder, too.

                          John and Ron--you guys are killing me. Good luck.

                              Good luck. I have fished several times in Lake Ponchartrain with Capt. Kenny Krieger (launches from the Slidell side). I traded him some Fish Bites bloodworms, which were not available in LA at the time, for assorted colors of Cocahoe minnows. I still have a few left. You are the only northener I have met who knows about Cocahoe minnows.
