Let's hear them!
So far I have done beer battered and fried, grilled with blackening seasoning, and my latest is what I call the Southern MD special. I have no idea what you'd actually call it, but an old timer gave me the recipe for rock and I tried it on snakehead and oddly enough, the snakehead tasted better!

Preheat oven to 350
Use baking dish (Pyrex or whatever) and a thin film of EVOO
Take filets, wash, trim, pat dry and place on dish
Take a spoon and get out a small scoop of mayo
Use the spoon to spread a thin layer of mayo on the top of the fish
Take some seasoning of your choice, I usually use Tony's in the white salt free style, and sprinkle lightly on top of mayo
Take some shredded Parmesan cheese and sprinkle on top (I didn't have Parmesan so I used an Italian mix this night)
Cook 12-17 mins depending on filet thickness (it will flake when ready, check by pressing flat with a fork)
