    Let's hear them!

    So far I have done beer battered and fried, grilled with blackening seasoning, and my latest is what I call the Southern MD special. I have no idea what you'd actually call it, but an old timer gave me the recipe for rock and I tried it on snakehead and oddly enough, the snakehead tasted better!

    Preheat oven to 350
    Use baking dish (Pyrex or whatever) and a thin film of EVOO
    Take filets, wash, trim, pat dry and place on dish
    Take a spoon and get out a small scoop of mayo
    Use the spoon to spread a thin layer of mayo on the top of the fish
    Take some seasoning of your choice, I usually use Tony's in the white salt free style, and sprinkle lightly on top of mayo
    Take some shredded Parmesan cheese and sprinkle on top (I didn't have Parmesan so I used an Italian mix this night)
    Cook 12-17 mins depending on filet thickness (it will flake when ready, check by pressing flat with a fork)

    I would like to try it Blackened. IMO, it's a good fish for people that do not like fish. It's a good fish for adding spices too and would like to hear some other recipes

    I actually thought it was pretty bland, flavor wise, but nice and flaky. I made it one night with white perch and everyone commented how the perch was better with the favor. The kids added more dill and lemon to it as they thought it was kind of plain too.

      Preheat oven to 350, lightly coat fillets with mayo and place in baking dish no more than 2 layers deep, cover fillets with your favorite salsa ( I like to use a peach or mango salsa with a little heat) and bake until fish is flaky, dump a liberal ammount of parmasean cheese on top of the salsa / fillets and turn up the heat to 425 or turn the brioler on and return to the oven until the cheese starts to brown.

      Poor mans shrimp. We do this up north for perch / cusk and will be what I do the next time I have a snakehead laying around. Fillet snakehead and cut into strips/chunks, boil fish until flaky, strain and dip in melted butter while hot or chill and dip in cocktail sauce. You can also add a little oldbay while boiling to give a little zip.

        Nice recipes, gents. I've kept it simple the few times I've had it so I could see how the fish itself tasted. I'm looking forward to branching out now. I think Jack (kanvery) had a good recipe, too.

        Michael--a recipe similar to that one was my go-to recipe for a while. The recipe I used involved cooking the fish over potatoes, onions, and pimientos in the oven. The top layer of the potato mixture also got coated with Parmesan and bread crumbs.
